Moist Chocolate Cake

Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup water
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract

For the Chocolate Frosting

  • 1 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup buttermilk
  • 2 1/2 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13-inch baking pan.
  2. In a saucepan over medium heat, melt the butter. Add the cocoa powder and water, stirring until smooth and well combined. Remove from the heat and let it cool slightly.
  3. In a large mixing bowl, whisk together the buttermilk, eggs, baking soda, and vanilla extract.
  4. Slowly pour the warm chocolate mixture into the buttermilk mixture, whisking continuously.
  5. Add the flour, sugar, and salt. Mix just until everything is combined and the batter is smooth. Do not overmix.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the cake cool in the pan for about 30 minutes.

 Make the Chocolate Frosting

  1. Melt the butter in a saucepan over medium heat.
  2. Add the buttermilk and cocoa powder and whisk until smooth.
  3. Remove from the heat and gradually whisk in the powdered sugar and vanilla extract.
  4. Continue whisking until the frosting is smooth and creamy.
  5. Spread the warm frosting over the cooled cake.
