Slow Cooker Mushroom Beef Tips

Ingredients

  • 2 lb (900 g) beef stew meat or sirloin tips, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 16 oz (450 g) mushrooms, sliced
  • 2 cups beef broth
  • 1 packet onion soup mix
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Brown the beef in batches for 2–3 minutes per side. This step adds extra flavor but can be skipped if you’re short on time.
  2. Transfer the browned beef to the slow cooker.
  3. Add the diced onion, minced garlic, and sliced mushrooms over the beef.
  4. In a bowl, whisk together the beef broth, onion soup mix, Worcestershire sauce, thyme, and black pepper.
  5. Pour the mixture over the beef and vegetables.
  6. Cover and cook:
    • Low: 7–8 hours
    • High: 4–5 hours
  7. About 30 minutes before serving, mix the cornstarch with the cold water to make a slurry. Stir it into the slow cooker, cover, and continue cooking until the sauce thickens.
  8. Garnish with fresh parsley before serving.

  • Buttered egg noodles
  • Steamed white rice
  • Cauliflower mash
  • Biscuits

Storage

  • Refrigerator: Store in an airtight container for up to 4 days.
  • Freezer: Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave.
