Firecracker Chicken Cottage Cheese Tortilla Lasagna

Ingredients

For the Filling:

  • 2 cups cooked shredded chicken
  • 1 cup cottage cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened

Firecracker Sauce:

  • 1/2 cup buffalo sauce
  • 1/4 cup honey or sugar-free honey substitute
  • 2 tablespoons hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Layers:

  • 6 small flour tortillas
  • Chopped green onions or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix buffalo sauce, honey, hot sauce, garlic powder, paprika, salt, and pepper.
  3. In another bowl, combine shredded chicken with half of the firecracker sauce.
  4. Mix cottage cheese and cream cheese until creamy.
  5. In a baking dish, spread a thin layer of sauce on the bottom.
  6. Add tortillas, then layer:
    • Chicken mixture
    • Cottage cheese mixture
    • Mozzarella and cheddar cheese
  7. Repeat the layers until ingredients are used up. Finish with cheese and extra sauce on top.
  8. Bake uncovered for 25–30 minutes until hot and bubbly with a golden cheesy top.
  9. Let rest for 5 minutes before slicing. Garnish with green onions or parsley.
