Crockpot Chicken and Stuffing

Ingredients
- 4 boneless, skinless chicken breasts
- 1 (10.5 oz) can cream of chicken soup
- 1 (6 oz) box stuffing mix
- ¾ cup water
- ½ cup sour cream (optional for extra creaminess)
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 cup frozen green beans or mixed vegetables (optional)
- Fresh parsley for garnish
Instructions
- Spray the inside of your crockpot with nonstick cooking spray.
- Place the chicken breasts in the bottom of the slow cooker. Season with garlic powder and black pepper.
- In a medium bowl, mix together the cream of chicken soup, water, and sour cream if using. Stir until smooth.
- Pour the soup mixture evenly over the chicken.
- Sprinkle the dry stuffing mix over the top. Gently press it down so some of the stuffing absorbs the liquid.
- If adding vegetables, spread them around the edges of the crockpot.
- Cover and cook:
- LOW for 6–7 hours
- or HIGH for 3–4 hours
- Once the chicken is tender and fully cooked, fluff the stuffing with a fork and serve warm.
