Crockpot Garlic Butter Chicken, Corn & Potatoes

Juicy chicken, sweet corn, buttery garlic sauce, and tender potatoes… the easiest comfort dinner!

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 ears corn on the cob, cut into thirds
  • 1 lb baby potatoes
  • 5 garlic cloves, minced or whole
  • 4 tbsp butter, melted
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup chicken broth
  • Fresh parsley, chopped (optional)

Instructions

  1. Add the baby potatoes and corn pieces to the bottom of the crockpot.
  2. Place the chicken breasts on top.
  3. In a small bowl, mix melted butter, garlic, paprika, Italian seasoning, salt, and pepper. Pour over everything.
  4. Add the chicken broth around the sides.
  5. Cover and cook:
    • LOW for 6–7 hours
    • or HIGH for 3–4 hours
  6. Once the chicken is tender and the potatoes are soft, garnish with fresh parsley and serve warm.

Optional Add-Ins

  • Grated parmesan cheese
  • Red pepper flakes for heat
  • Green beans or carrots
  • Extra butter for richer sauce
