 Taco Cupcakes Recipe

 Servings: 12 (2 cups each)

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 24 wonton wrappers
  • 1/2 cup sour cream (for topping)
  • 1/2 cup salsa (for topping)
  • 1/4 cup chopped green onions

Optional toppings:

  • Diced tomatoes
  • Guacamole
  • Sliced jalapeños
  • Black olives

 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
  2. Cook the beef
    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add seasoning
    Stir in taco seasoning with a little water (follow packet instructions). Simmer for 3–5 minutes.
  4. Layer the cupcakes
    • Place 1 wonton wrapper in each muffin cup
    • Add a spoon of taco meat
    • Sprinkle cheese
    • Add a second wonton wrapper
    • Repeat with more beef + cheese on top
  5. Bake
    Bake for 15–18 minutes until golden and crispy.
  6. Cool slightly
    Let them sit for 5 minutes before removing from the pan.
  7. Add toppings
    Top with sour cream, salsa, green onions, and any extras you like.

 Tips:

  • Don’t overfill—this keeps them crispy, not soggy
  • Try adding beans or corn to the beef for extra flavor
  • Serve immediately for the best crunch
