Berry Cheesecake Cups (No-Bake)
Ingredients
Crust:
- 1 cup crushed biscuits (like digestive biscuits or graham crackers)
- 4 tbsp melted butter
Filling:
- 200 g cream cheese (softened)
- 1/2 cup heavy whipping cream (cold)
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Berry Sauce:
- 1 cup strawberries or mixed berries
- 1/3 cup sugar
- 1 tsp lemon juice
- 1 tsp cornstarch (mixed with a little water)
Instructions
1. Make the crust:
- Mix crushed biscuits with melted butter.
- Press a layer into the bottom of your cup or jar.
- Chill in the fridge for 10 minutes.
2. Prepare the filling:
- Beat cream cheese with sugar and vanilla until smooth.
- Add the whipping cream and beat until thick and creamy.
- Mix in the lemon juice.
- Spoon or pipe the filling over the crust.
3. Make the berry sauce:
- In a saucepan over medium heat, add berries, sugar, and lemon juice.
- Cook until the berries break down.
- Stir in the cornstarch mixture and cook until thick and glossy.
- Let it cool slightly.
4. Assemble:
- Pour the berry sauce over the cheesecake layer.
- Chill for at least 1 hour before serving.
Tips:
- Add crushed pistachios or nuts to the filling for extra texture (like in the photo).
- Frozen berries work perfectly.
- Adjust sugar to your taste.
