Honey BBQ Chicken Rice Skillet

INGREDIENTS
- 1 1/2 lbs boneless chicken thighs, diced
- 1 cup long-grain white rice, rinsed
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 2 tbsp honey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (bell peppers, corn, peas, or carrots)
- 1/2 tsp paprika
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- Optional: chopped parsley or green onions for garnish
INSTRUCTIONS
- Cook the chicken
Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt, pepper, and paprika, and cook until browned (about 5–7 minutes). - Sauté aromatics
Add onion and cook for 2–3 minutes until soft. Stir in garlic and cook for 30 seconds. - Add rice & liquids
Stir in the rinsed rice, then pour in chicken broth, BBQ sauce, and honey. Mix well. - Add veggies
Toss in the mixed vegetables and stir to combine. - Simmer
Bring to a light boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed. - Finish & serve
Fluff the rice, garnish with parsley or green onions, and serve warm.
TIPS
- Use smoked BBQ sauce for extra flavor
- Add a pinch of chili flakes if you like heat
- Swap chicken thighs for chicken breast if you prefer leaner meat
