Easy One-Pot Chicken Parmesan Pasta
Crispy, cheesy, and ready in about 30 minutes!
Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 lb penne or rotini pasta (uncooked)
- 24 oz marinara sauce (your favorite)
- 2 cups chicken broth or water
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and black pepper (to taste)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh parsley or basil (optional, for garnish)
Instructions:
- Cook the chicken
Heat olive oil in a large pot over medium heat.
Add the chicken pieces, season with salt, pepper, and garlic powder, and cook until golden and fully cooked (about 5–7 minutes). Remove and set aside. - Add pasta and sauce
In the same pot, add the uncooked pasta, marinara sauce, chicken broth, and Italian seasoning. Stir well. - Simmer
Bring to a boil, then reduce heat to low. Cover and let it simmer for about 12–15 minutes, stirring occasionally, until pasta is tender. - Combine everything
Return the cooked chicken to the pot and mix well. - Add cheese
Sprinkle mozzarella and Parmesan cheese over the pasta. Cover for a few minutes until melted and gooey. - Serve
Garnish with fresh parsley or basil if you like. Serve hot and enjoy!
Tip: For extra crispiness, you can broil the pasta for 2–3 minutes after adding the cheese.
