Creamy Sausage Pasta Soup
Ingredients
- 1 lb (450g) Italian sausage (mild or spicy)
- 1 small onion, diced
- 2–3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14–15 oz) diced tomatoes
- 1 cup heavy cream
- 2 cups small pasta (ditalini, macaroni, or shells)
- 1 tsp Italian seasoning
- ½ tsp chili flakes (optional)
- Salt & black pepper (to taste)
- ½ cup grated Parmesan cheese
- Optional: spinach or parsley
Instructions
- Cook the sausage
In a large pot, cook sausage over medium heat until browned. Break it into small pieces and drain excess fat. - Sauté aromatics
Add diced onion and cook 3–4 minutes until soft. Stir in garlic and cook 1 minute. - Add broth & tomatoes
Pour in chicken broth and diced tomatoes. Add Italian seasoning and chili flakes. Bring to a light boil. - Cook the pasta
Add uncooked pasta and simmer 8–10 minutes until tender. - Make it creamy
Lower heat and stir in:- heavy cream
- Parmesan cheese
Let simmer 2–3 minutes until thick and creamy.
- Finish & serve
Add spinach (optional), adjust seasoning, and serve hot.
Tips
- Add cream cheese for extra richness
- Use spicy sausage for more flavor
- Serve with bread — perfect combo
- Soup thickens as it cools → add broth if needed
