 Description

A rich and comforting roasted tomato soup made with caramelized tomatoes, garlic, and onions. Smooth, flavorful, and perfect for cozy meals.

 Ingredients

  • 2 lbs ripe tomatoes (Roma or plum), halved
  • 1 whole garlic bulb
  • 1 large onion, quartered
  • 3 tablespoons olive oil
  • 2 cups vegetable broth (or chicken broth)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil (or fresh if available)
  • 1/2 teaspoon thyme (optional)
  • 1/2 cup heavy cream (optional, for creamy texture)

 Instructions

1. Prepare the Vegetables

  • Preheat oven to 200°C (400°F).
  • Place tomatoes and onion on a baking tray.
  • Cut the top off the garlic bulb, drizzle with olive oil, and wrap in foil.
  • Add it to the tray.
  • Drizzle everything with olive oil, salt, and pepper.

2. Roast

  • Roast in the oven for 35–40 minutes until soft and slightly charred.
  • Let them cool slightly.

3. Blend

  • Squeeze the roasted garlic out of its skin.
  • Add all roasted vegetables to a blender.
  • Blend until smooth.

4. Simmer

  • Pour the mixture into a pot.
  • Add broth, basil, and thyme.
  • Simmer for 10–15 minutes on medium heat.

5. Add Cream (Optional)

  • Stir in heavy cream for a richer taste.
  • Adjust seasoning with salt and pepper.

 Serving Suggestions

  • Serve hot with toasted bread
  • Perfect with grilled cheese sandwich
  • Garnish with fresh basil or a drizzle of cream

 Tips

  • Use very ripe tomatoes for the best flavor.
  • Add a pinch of sugar if the soup tastes too acidic.
  • For extra depth, roast a red bell pepper with the tomatoes.
