Ingredients
- 1 lb (450 g) boneless, skinless chicken breast, cut into bite-size pieces
- 12 oz (340 g) smoked sausage, sliced
- 12 oz (340 g) pasta, cooked and drained
- 1 tbsp olive oil
- 1 small onion, sliced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1/2 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp butter
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta: Boil the pasta according to the package directions until al dente. Drain and set aside.
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, paprika, and Italian seasoning. Cook for 5–7 minutes, stirring occasionally, until golden and cooked through. Remove from the skillet.
- Brown the sausage: Add the sliced sausage to the same skillet and cook for 2–3 minutes until lightly browned.
- Sauté the vegetables: Add the onion, bell pepper, broccoli, and mushrooms. Cook for 4–5 minutes until the vegetables are tender-crisp. Stir in the garlic and cook for another 30 seconds.
- Bring it together: Return the chicken to the skillet. Add the cooked pasta, chicken broth, and soy sauce. Toss everything together and cook for 2–3 minutes so the flavors combine.
- Finish: Stir in the butter and Parmesan until melted and creamy. Taste and adjust the seasoning.
- Serve: Garnish with fresh parsley and extra Parmesan. Serve hot.
Tip: For extra creaminess, add 1/3 cup heavy cream along with the chicken broth.
