Slow Cooker Maple Dijon Beef Roast
This easy Slow Cooker Maple Dijon Beef Roast is tender, flavorful, and perfect for a comforting weeknight dinner. The beef slowly cooks in a delicious maple-Dijon sauce made with simple ingredients, creating a rich, savory-sweet flavor that pairs beautifully with mashed potatoes, egg noodles, or rice.
Ingredients
- 3 to 3½ pounds beef top blade roast or chuck roast
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ cup pure maple syrup
- ⅓ cup Dijon mustard
- 1 cup low-sodium beef broth
- 2 tablespoons apple cider vinegar
- 2 teaspoons fresh thyme leaves, chopped
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
Optional for Thickening
- 1 tablespoon cornstarch
- 1 tablespoon cold water
Instructions
- Pat the beef roast dry with paper towels. Season all sides with salt and black pepper.
- Place the seasoned roast in the bottom of a 5- to 7-quart slow cooker.
- Add the sliced onion and minced garlic around and over the roast.
- In a bowl, whisk together the maple syrup, Dijon mustard, beef broth, apple cider vinegar, and fresh thyme until smooth.
- Pour the maple-Dijon mixture evenly over the beef, making sure the roast is well coated.
- Cover the slow cooker and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is very tender and easily pulls apart with a fork.
- Carefully transfer the cooked roast to a cutting board and let it rest for about 10 minutes.
- For a thicker sauce, mix the cornstarch with cold water until smooth. Stir it into the cooking liquid in the slow cooker and cook on HIGH for 10–15 minutes, until the sauce thickens slightly.
- Slice or shred the beef and return it to the slow cooker, gently tossing it in the warm maple-Dijon sauce.
- Serve hot with plenty of sauce and onions spooned over the top.
