Southern Sausage Gravy & Biscuits

Ingredients
For the Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 6 tablespoons cold unsalted butter, cubed
- ¾ cup cold buttermilk
For the Sausage Gravy
- 1 pound breakfast sausage
- ¼ cup all-purpose flour
- 2½ to 3 cups whole milk
- ½ teaspoon salt, or to taste
- 1 teaspoon freshly ground black pepper
- ¼ teaspoon garlic powder, optional
- ¼ teaspoon onion powder, optional
- Pinch of crushed red pepper flakes, optional
Instructions
Make the Biscuits
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Add the cold butter and cut it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Pour in the cold buttermilk and gently mix just until a dough forms. Do not overmix.
- Turn the dough onto a lightly floured surface and gently pat it into a thick rectangle.
- Fold the dough over itself a few times to create flaky layers, then pat it to about 1 inch thick.
- Cut out the biscuits and place them on a baking sheet.
- Bake for 12–15 minutes, or until beautifully golden and fluffy.
Make the Sausage Gravy
- While the biscuits are baking, cook the sausage in a large skillet over medium heat, breaking it into small crumbles.
- Once the sausage is fully cooked, sprinkle the flour over the sausage and stir well.
- Cook for about 1–2 minutes to remove the raw flour taste.
- Slowly pour in the milk while stirring continuously.
- Add the salt, black pepper, garlic powder, onion powder, and red pepper flakes if using.
- Continue cooking and stirring for 5–8 minutes, until the gravy becomes thick, creamy, and smooth.
- If the gravy becomes too thick, add a little more milk until you reach your desired consistency.
To Serve
Split the warm biscuits in half and generously spoon the creamy sausage gravy over the top. Finish with an extra sprinkle of freshly cracked black pepper and serve immediately.
