INGREDIENTS
- 8 lamb chops
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 3 tablespoons butter
- 1 teaspoon paprika
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon salt
HOW TO MAKE PAN-SEARED LAMB CHOPS
- Season the lamb: Pat the lamb chops dry with paper towels. Season both sides with salt, black pepper, paprika, rosemary, and thyme.
- Heat the pan: Heat the olive oil in a large heavy skillet over medium-high heat until hot.
- Sear the chops: Add the lamb chops and cook for about 3–4 minutes per side, or until deeply browned and cooked to your preferred doneness.
- Add garlic butter: Reduce the heat to medium-low. Add the butter and minced garlic to the pan.
- Baste: Once the butter melts, spoon the garlic butter repeatedly over the lamb chops for about 1–2 minutes.
- Rest: Remove the lamb chops from the pan and let them rest for 5 minutes before serving.
TIP: For the juiciest lamb chops, use a meat thermometer and avoid overcooking them.
Serve with roasted potatoes, rice, or your favorite side dish.
