GARLIC HERB PORK LOIN

Ingredients
- 1 3-pound pork loin roast
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, melted
- 5 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 375°F.
- Pat the pork loin dry with paper towels. This helps the seasoning stick and gives the outside a beautiful golden crust.
- In a small bowl, combine the melted butter, olive oil, minced garlic, rosemary, thyme, oregano, paprika, salt, black pepper, parsley, and lemon juice.
- Rub the garlic-herb mixture generously all over the pork loin, making sure every side is well coated.
- Place the pork loin in a roasting pan or baking dish. Roast uncovered for about 60–75 minutes, depending on the size and thickness of the roast.
- Baste the pork with the pan juices once or twice while it cooks.
- Check the center with a meat thermometer. Remove the pork from the oven when it reaches 145°F internally.
- Cover loosely with foil and let the pork rest for 10–15 minutes before slicing. This keeps the meat juicy and tender.
- Slice into thick pieces and spoon some of the flavorful pan juices over the top.
