Cheesy Potato Rounds

Ingredients

  • 4 medium potatoes, sliced into thin rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Sour cream, for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and slice them into thin, even rounds.
  3. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
  4. Add the potato slices and toss them until they are evenly coated with the seasoning mixture.
  5. Arrange the potato rounds in a single layer on a baking sheet lined with parchment paper.
  6. Bake for 20 to 25 minutes, turning the slices halfway through cooking.
  7. Sprinkle the cheddar cheese and Parmesan cheese over the potatoes and return them to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh parsley and serve warm with sour cream, if desired.

Tips

  • For extra crispiness, soak the potato slices in cold water for 30 minutes before baking.
  • You can add bacon bits, green onions, or a pinch of chili flakes for more flavor.
