Creamy Cottage Cheese Beef Stroganoff Skillet

- 2 cups beef broth
- 8 ounces uncooked egg noodles
- 1 cup cottage cheese
- ¼ cup sour cream
- 2 tablespoons cream cheese, softened
- 2 tablespoons chopped fresh parsley, plus more for garnish
Instructions
- Heat the olive oil in a large deep skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles. Drain excess grease if needed.
- Add the diced onion and sliced mushrooms. Cook for 5–6 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
- Mix in the Worcestershire sauce, Dijon mustard, paprika, onion powder, garlic powder, salt, and black pepper.
- Pour in the beef broth and bring to a gentle boil. Add the uncooked egg noodles, stir well, then reduce the heat to medium-low. Cover and simmer for 8–10 minutes, stirring occasionally, until the noodles are tender and most of the liquid has been absorbed.
- While the noodles cook, blend the cottage cheese, sour cream, and cream cheese until smooth and creamy.
- Remove the skillet from the heat. Let it cool for 2 minutes, then gently stir in the cottage cheese mixture until fully combined. This keeps the sauce silky and prevents curdling.
- Fold in the chopped parsley and adjust the seasoning with additional salt and pepper if needed.
- Garnish with extra parsley and serve hot with garlic bread, roasted vegetables, or a crisp green salad.
