Ingredients
- 2 large cucumbers, thinly sliced
- 3 cloves garlic, minced
- 1–2 fresh red chilies, thinly sliced (or 1 teaspoon red pepper flakes)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar (or white vinegar)
- 1 tablespoon sesame oil
- 1 teaspoon sugar (optional)
- 1 teaspoon sesame seeds
- 2 tablespoons chopped fresh cilantro or green onions (optional)
Instructions
- Wash the cucumbers thoroughly and slice them into thin rounds or bite-sized pieces.
- Place the cucumbers in a bowl and sprinkle with a pinch of salt. Let them sit for 10–15 minutes to release excess moisture, then drain and pat dry.
- In a separate bowl, whisk together the garlic, chili, soy sauce, vinegar, sesame oil, and sugar until well combined.
- Pour the dressing over the cucumbers and toss until every slice is evenly coated.
- Sprinkle with sesame seeds and chopped cilantro or green onions, if using.
- Refrigerate for 15–30 minutes before serving to allow the flavors to blend.
Tips
- Add a drizzle of chili oil for extra heat.
- For a sweeter flavor, add a little more sugar or a teaspoon of honey.
- Best served cold and enjoyed within 24 hours for maximum crunch.
Enjoy these crisp, spicy garlic chili cucumbers as a refreshing snack or alongside your favorite grilled meats, rice dishes, or noodles!
