French Onion Mushroom Smothered Chicken
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons butter
- 8 oz (225 g) mushrooms, sliced
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 can (10.5 oz) condensed French onion soup
- 1 cup beef broth or chicken broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 cup shredded mozzarella or Swiss cheese
- 1 cup crispy fried onions
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken with salt, pepper, and garlic powder.
- Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden. Transfer to a baking dish.
- In the same skillet, melt the butter. Cook the onions for 8–10 minutes until softened and lightly caramelized.
- Add the mushrooms and cook for 5 minutes, then stir in the garlic for 30 seconds.
- Pour in the French onion soup, broth, Worcestershire sauce, and thyme. Simmer for 5 minutes until slightly thickened.
- Pour the mushroom-onion sauce over the chicken.
- Sprinkle the cheese evenly over the top.
- Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Sprinkle the crispy fried onions over the chicken and bake for an additional 5 minutes, until golden and crisp.
