A delicious, budget-friendly comfort food made with just 3 simple ingredients! This easy corned beef and potato bake is crispy on top, hearty, filling, and perfect for a quick family dinner.
Ingredients
- 1 can (12 oz / 340 g) canned corned beef
- 4 large potatoes, peeled and thinly sliced
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a medium baking dish.
- Prepare the potatoes: Peel and thinly slice the potatoes. Try to keep the slices similar in thickness so they cook evenly.
- Layer the ingredients: Arrange half of the sliced potatoes in the baking dish. Break the canned corned beef into small pieces and spread half over the potatoes. Sprinkle with half of the shredded cheddar cheese.
- Repeat the layers with the remaining potatoes, corned beef, and cheese, finishing with a generous layer of cheese on top.
- Cover and bake with aluminum foil for about 35–40 minutes, or until the potatoes are tender.
- Uncover and continue baking for another 10–15 minutes, until the cheese is melted, golden, and bubbly.
- Let the casserole rest for 5–10 minutes before slicing and serving.
Tips
- Slice the potatoes very thinly to ensure they cook through.
- For extra flavor, you can add black pepper, garlic powder, or chopped onion, although the basic recipe uses only 3 ingredients.
- If the top browns too quickly, loosely cover it with foil.
- For a crispier top, place the bake under the broiler for 1–2 minutes at the end, watching carefully.
Serve hot with a simple green salad or steamed vegetables for a comforting and satisfying meal.
