Low-Calorie Vegetable Casserole

Ingredients
- 1 large broccoli, cut into florets
- 1 tablespoon olive oil
- 1 handful baby kale
- 1 small onion, diced
- 7 small garlic cloves, minced
- 12 cherry or grape tomatoes, halved
- 2 large eggs
- 1/2 cup low-fat cottage cheese or plain Greek yogurt
- 1/2 cup shredded low-fat mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano or Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking dish with olive oil.
- Blanch the broccoli florets in boiling water for 2–3 minutes, then drain well.
- Heat the olive oil in a skillet over medium heat. Sauté the onion until softened, then add the garlic and cook for 30 seconds.
- Stir in the baby kale and cherry tomatoes. Cook for 1–2 minutes, just until the kale begins to wilt.
- In a large bowl, whisk together the eggs, cottage cheese (or Greek yogurt), mozzarella, Parmesan, salt, pepper, paprika, and oregano.
- Fold the broccoli and sautéed vegetables into the egg mixture until evenly combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25–30 minutes, or until the casserole is set and the top is lightly golden.
- Let it rest for 5 minutes before serving.
