Ingredients

  • 2 cups elbow macaroni
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup dill pickle juice
  • 1 cup chopped dill pickles
  • ½ cup diced cheddar cheese
  • ¼ cup finely diced red onion
  • 2 tablespoons chopped fresh dill (or 2 teaspoons dried dill)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Salt, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large mixing bowl, whisk together the mayonnaise, sour cream, pickle juice, Dijon mustard, garlic powder, onion powder, black pepper, and a pinch of salt until smooth.
  3. Add the cooled macaroni, chopped dill pickles, cheddar cheese, red onion, and fresh dill to the bowl.
  4. Gently stir until all the ingredients are evenly coated with the creamy dressing.
  5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.
