Congo Bars Recipe

Ingredients

  • ⅔ cup (150 g) butter, melted
  • 2¼ cups (450 g) packed brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ cups (255 g) semisweet chocolate chips
  • ½–1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 10 × 15-inch baking pan (or use a 9 × 13-inch pan for thicker bars).
  3. In a large bowl, mix the melted butter and brown sugar until smooth.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Add the flour, baking powder, and salt, mixing just until combined.
  6. Fold in the chocolate chips and walnuts, if using.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25–30 minutes (or 35–40 minutes if using a 9 × 13-inch pan), until the edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
  9. Let the bars cool completely before cutting into squares.

These bars are rich, chewy, and have a buttery brown sugar flavor similar to blondies, with plenty of chocolate chips in every bite.
