Congo Bars Recipe
Ingredients
- ⅔ cup (150 g) butter, melted
- 2¼ cups (450 g) packed brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1½ cups (255 g) semisweet chocolate chips
- ½–1 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 10 × 15-inch baking pan (or use a 9 × 13-inch pan for thicker bars).
- In a large bowl, mix the melted butter and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Add the flour, baking powder, and salt, mixing just until combined.
- Fold in the chocolate chips and walnuts, if using.
- Spread the batter evenly into the prepared pan.
- Bake for 25–30 minutes (or 35–40 minutes if using a 9 × 13-inch pan), until the edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
- Let the bars cool completely before cutting into squares.
These bars are rich, chewy, and have a buttery brown sugar flavor similar to blondies, with plenty of chocolate chips in every bite.
