Ingredients
- 1 lb (450g) steak, thinly sliced
- 2 bell peppers, sliced (any color)
- 1 small onion, sliced (optional)
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
- Butter or cooking spray for the skillet
Instructions
- Season the sliced steak with garlic powder, paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the steak and cook for 3–4 minutes until browned. Remove from the skillet and set aside.
- In the same skillet, cook the bell peppers (and onion if using) until tender and lightly caramelized, about 5–7 minutes.
- Return the steak to the skillet and toss everything together.
- Place a tortilla in a clean skillet over medium heat.
- Sprinkle cheese over one half of the tortilla, add the steak and pepper mixture, then top with more cheese.
- Fold the tortilla over and cook until golden brown and crispy, about 2–3 minutes per side.
- Repeat with the remaining tortillas.
- Slice into wedges and serve hot.
Tips
- Use ribeye, sirloin, or flank steak for the best flavor.
- Add sautéed mushrooms or jalapeños for extra flavor.
- Serve with salsa, sour cream, guacamole, or pico de gallo.
- For extra crispiness, lightly butter the outside of the tortillas before cooking.
