Ingredients

  • 1 lb (450 g) rotini pasta
  • 1 lb (450 g) ground beef (hamburger)
  • 1½ cups shredded cheddar cheese
  • 1½ cups chopped iceberg lettuce
  • 1½ cups halved cherry tomatoes
  • 1 cup minced onion
  • 1½ cups diced dill pickles
  • 1⅓ cups Thousand Island dressing
  • ⅔ cup mayonnaise
  • Dill pickle chips, for garnish

Instructions

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil.
    • Cook the rotini according to package directions until al dente.
    • Drain and rinse under cold water to cool completely.
  2. Cook the Beef
    • In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked.
    • Drain excess grease and allow the beef to cool.
  3. Prepare the Dressing
    • In a medium bowl, whisk together the Thousand Island dressing and mayonnaise until smooth and creamy.
  4. Assemble the Salad
    • In a large serving bowl, combine the cooled pasta, cooked beef, cheddar cheese, lettuce, cherry tomatoes, onion, and diced pickles.
    • Pour the dressing over the top and toss gently until everything is evenly coated.
  5. Chill
    • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
  6. Serve
