Baked Cheddar Broccoli Noodle Casserole

A creamy, cheesy casserole loaded with tender noodles and broccoli, baked until golden and bubbly. Perfect as a comforting family dinner or a hearty side dish.

Ingredients

  • 12 oz (340 g) egg noodles
  • 4 cups broccoli florets, chopped
  • 2 tablespoons butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup sour cream
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup breadcrumbs
  • 1 tablespoon melted butter

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package directions until just tender. Drain.
  3. Steam broccoli for 3–4 minutes until bright green and slightly tender.
  4. In a large saucepan, melt butter over medium heat. Add onion and cook until softened, about 4 minutes. Stir in garlic and cook for 30 seconds.
  5. Sprinkle flour over the onion mixture and cook for 1 minute, stirring constantly.
  6. Gradually whisk in milk and cook until the sauce thickens.
  7. Remove from heat and stir in 1½ cups cheddar cheese, sour cream, Dijon mustard, salt, pepper, and paprika.
  8. Fold in the cooked noodles and broccoli until evenly coated.
  9. Transfer the mixture to the prepared baking dish.
  10. Combine breadcrumbs with melted butter and the remaining ½ cup cheddar cheese. Sprinkle evenly over the casserole.
  11. Bake for 25–30 minutes, or until hot and golden brown on top.
  12. Let stand for 5 minutes before serving.

Tips

  • Add cooked chicken, turkey, or ham for a complete meal.
  • For extra flavor, mix in a handful of grated Parmesan cheese.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
