Baked Cheddar Broccoli Noodle Casserole
A creamy, cheesy casserole loaded with tender noodles and broccoli, baked until golden and bubbly. Perfect as a comforting family dinner or a hearty side dish.
Ingredients
- 12 oz (340 g) egg noodles
- 4 cups broccoli florets, chopped
- 2 tablespoons butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups milk
- 2 cups shredded sharp cheddar cheese, divided
- 1/2 cup sour cream
- 1 teaspoon Dijon mustard (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup breadcrumbs
- 1 tablespoon melted butter
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook egg noodles according to package directions until just tender. Drain.
- Steam broccoli for 3–4 minutes until bright green and slightly tender.
- In a large saucepan, melt butter over medium heat. Add onion and cook until softened, about 4 minutes. Stir in garlic and cook for 30 seconds.
- Sprinkle flour over the onion mixture and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and cook until the sauce thickens.
- Remove from heat and stir in 1½ cups cheddar cheese, sour cream, Dijon mustard, salt, pepper, and paprika.
- Fold in the cooked noodles and broccoli until evenly coated.
- Transfer the mixture to the prepared baking dish.
- Combine breadcrumbs with melted butter and the remaining ½ cup cheddar cheese. Sprinkle evenly over the casserole.
- Bake for 25–30 minutes, or until hot and golden brown on top.
- Let stand for 5 minutes before serving.
Tips
- Add cooked chicken, turkey, or ham for a complete meal.
- For extra flavor, mix in a handful of grated Parmesan cheese.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
