Cheesy Beef Hash Brown Cups
Ingredients
For the Hash Brown Cups:
- 4 cups frozen hash browns, thawed
- 2 tablespoons melted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Filling:
- 1 lb (450 g) shredded cooked beef (pot roast, brisket, or roast beef)
- 1/2 cup BBQ sauce (optional)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Directions
- Preheat oven to 400°F (200°C) and grease a 12-cup muffin tin.
- In a large bowl, combine the hash browns, melted butter, salt, and pepper.
- Press the hash brown mixture firmly into the muffin cups, creating a nest shape.
- Bake for 20–25 minutes, or until golden brown and crispy.
- Mix the shredded beef with the BBQ sauce, if using.
- Fill each hash brown cup with the beef mixture.
- Top with cheddar and mozzarella cheese.
- Return to the oven and bake for 8–10 minutes, until the cheese is melted and bubbly.
- Let cool for 5 minutes before removing from the muffin tin.
