5-Minute Cottage Cheese Cinnamon Roll Mug Cake
A soft, protein-packed mug cake with all the comforting flavors of a cinnamon roll.
Ingredients:
1/4 cup cottage cheese
1 large egg
2 tbsp oat flour
1 tbsp maple syrup or honey
1/2 tsp vanilla extract
1/2 tsp baking powder
Cinnamon Swirl:
1 tsp brown sugar or sweetener
1/2 tsp ground cinnamon
Optional Glaze:
1 tbsp cream cheese, softened
1 tsp milk
1 tsp powdered sugar or powdered sweetener
Instructions:
Blend the cottage cheese until smooth.
In a microwave-safe mug, whisk together the cottage cheese, egg, oat flour, maple syrup, vanilla, and baking powder until smooth.
In a small bowl, mix the cinnamon swirl ingredients.
Sprinkle the cinnamon mixture over the batter and gently swirl with a toothpick or spoon.
Microwave on high for 60–90 seconds, or until the center is set.
If making the glaze, whisk together the cream cheese, milk, and powdered sugar until smooth.
Drizzle the glaze over the warm mug cake and serve immediately.
Helpful Tip: Microwave times vary, so start with 60 seconds and add extra time in 10-second increments if needed. Overcooking can make the cake dry.
