Natural Morphine Lentil & Veggie Stew

A hearty, comforting lentil and vegetable stew packed with wholesome ingredients. The nickname “Natural Morphine” comes from its warm, soothing qualities that make it perfect for cozy meals.

Ingredients

  • 1 cup dried brown or green lentils, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 medium potato, diced
  • 1 zucchini, chopped
  • 1 can (14 oz / 400 g) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 cups fresh spinach or kale
  • Juice of ½ lemon
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook for 5–6 minutes until softened.
  2. Stir in the garlic and cook for 1 minute until fragrant.
  3. Add the lentils, potato, zucchini, diced tomatoes, vegetable broth, cumin, paprika, turmeric, thyme, salt, and pepper.
  4. Bring to a boil, then reduce the heat and simmer for 30–35 minutes, or until the lentils are tender.
  5. Stir in the spinach or kale and cook for another 3–5 minutes until wilted.
  6. Add the lemon juice and adjust the seasoning if needed.
  7. Serve hot, garnished with fresh parsley.

Tips

  • For extra protein, add chickpeas or white beans.
  • For a spicy kick, add a pinch of red pepper flakes.
  • This stew tastes even better the next day after the flavors have melded together.
