Dill Pickle Chicken Fritters

These crispy, cheesy chicken fritters are packed with tangy dill pickle flavor and make a great appetizer, lunch, or easy weeknight dinner. Ready in about 20 minutes!

Ingredients

  • 1 lb (450g) ground chicken
  • 1/3 cup finely chopped dill pickles
  • 1 tbsp Ranch seasoning
  • 1 tbsp fresh dill, finely chopped
  • 1 large egg
  • 1 cup shredded sharp cheddar cheese
  • 1 tbsp coconut flour
  • 2 tbsp oil, for frying

Instructions

  1. In a large bowl, combine the ground chicken, chopped pickles, Ranch seasoning, and fresh dill.
  2. Add the egg, cheddar cheese, and coconut flour. Mix until well combined.
  3. Using a scoop or measuring cup, form 8 small fritters and flatten them slightly.
  4. Heat oil in a large skillet over medium heat.
  5. Cook the fritters for 3–4 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve hot with ranch dressing, dill pickle dip, or your favorite sauce.

  • Servings: 4 (8 fritters)

Tip: For extra pickle flavor, add 1–2 tablespoons of pickle juice to the mixture or serve with a dill pickle ranch dipping sauce.
