Dill Pickle Chicken Fritters
These crispy, cheesy chicken fritters are packed with tangy dill pickle flavor and make a great appetizer, lunch, or easy weeknight dinner. Ready in about 20 minutes!
Ingredients
- 1 lb (450g) ground chicken
- 1/3 cup finely chopped dill pickles
- 1 tbsp Ranch seasoning
- 1 tbsp fresh dill, finely chopped
- 1 large egg
- 1 cup shredded sharp cheddar cheese
- 1 tbsp coconut flour
- 2 tbsp oil, for frying
Instructions
- In a large bowl, combine the ground chicken, chopped pickles, Ranch seasoning, and fresh dill.
- Add the egg, cheddar cheese, and coconut flour. Mix until well combined.
- Using a scoop or measuring cup, form 8 small fritters and flatten them slightly.
- Heat oil in a large skillet over medium heat.
- Cook the fritters for 3–4 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with ranch dressing, dill pickle dip, or your favorite sauce.
