Ingredients
For the Chocolate Crust
- 1 cup chocolate cookie crumbs
- 2 tbsp melted butter
- 1 tbsp unsweetened cocoa powder
For the Mocha Cheesecake Filling
- 8 oz (225 g) reduced-fat cream cheese, softened
- 1 cup plain Greek yogurt
- 1/3 cup granulated sweetener or sugar
- 1 large egg
- 1 tbsp instant coffee granules
- 1 tbsp hot water
- 1 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- 1 oz (30 g) dark chocolate, melted

Instructions
- Preheat oven to 325°F (165°C). Line an 8-inch square baking pan with parchment paper.
- Mix the chocolate cookie crumbs, melted butter, and cocoa powder. Press firmly into the bottom of the prepared pan.
- Bake the crust for 8 minutes, then let it cool slightly.
- Dissolve the instant coffee in the hot water and allow it to cool.
- In a large bowl, beat the cream cheese until smooth.
- Add the Greek yogurt, sweetener, egg, vanilla extract, cocoa powder, melted chocolate, and dissolved coffee. Mix until creamy and well combined.
- Pour the filling over the crust and spread evenly.
- Bake for 25–30 minutes, or until the center is just set.
- Cool completely at room temperature, then refrigerate for at least 3 hours.
- Slice into bars and garnish with whipped topping, cocoa powder, or chocolate shavings if desired.
