Chicken Casseroles with Maroilles Cheese and Homemade Fries
A rich and comforting French-inspired dish featuring tender chicken baked in a creamy Maroilles cheese sauce, served with crispy homemade fries.
Ingredients
For the Chicken Casseroles
- 4 chicken fillets (about 600 g)
- 200 g Maroilles cheese, rind removed and diced
- 1 medium onion, finely chopped
- 200 ml heavy cream
- 1 tbsp butter
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp dried thyme (optional)
For the Homemade Fries
- 4 large potatoes
- Vegetable oil for frying
- Salt, to taste
Instructions
Prepare the Fries
- Peel the potatoes and cut them into fries.
- Rinse in cold water and pat dry thoroughly.
- Heat oil in a deep fryer or large pot to 160°C (320°F).
- Fry the potatoes for 5–6 minutes until softened but not browned.
- Remove and let them rest for 10 minutes.
- Increase the oil temperature to 190°C (375°F) and fry again for 2–3 minutes until golden and crispy.
- Drain on paper towels and season with salt.
Prepare the Chicken Casseroles
- Preheat the oven to 180°C (350°F).
- Heat the butter and olive oil in a skillet over medium heat.
- Add the chopped onion and cook until soft and translucent.
- Add the chicken fillets and cook for 3–4 minutes per side until lightly golden.
- Season with salt, pepper, and thyme.
- Place the chicken in individual casserole dishes or one baking dish.
- Pour the heavy cream over the chicken.
- Scatter the Maroilles cheese on top.
- Bake for 20–25 minutes, until the cheese is melted and bubbly and the chicken is fully cooked.
Serving
Serve the hot chicken casseroles straight from the oven with a generous portion of crispy homemade fries. A simple green salad makes a perfect side dish to balance the richness of the cheese sauce.
