Chicken Casseroles with Maroilles Cheese and Homemade Fries

A rich and comforting French-inspired dish featuring tender chicken baked in a creamy Maroilles cheese sauce, served with crispy homemade fries.

Ingredients

For the Chicken Casseroles

  • 4 chicken fillets (about 600 g)
  • 200 g Maroilles cheese, rind removed and diced
  • 1 medium onion, finely chopped
  • 200 ml heavy cream
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp dried thyme (optional)

For the Homemade Fries

  • 4 large potatoes
  • Vegetable oil for frying
  • Salt, to taste

Instructions

Prepare the Fries

  1. Peel the potatoes and cut them into fries.
  2. Rinse in cold water and pat dry thoroughly.
  3. Heat oil in a deep fryer or large pot to 160°C (320°F).
  4. Fry the potatoes for 5–6 minutes until softened but not browned.
  5. Remove and let them rest for 10 minutes.
  6. Increase the oil temperature to 190°C (375°F) and fry again for 2–3 minutes until golden and crispy.
  7. Drain on paper towels and season with salt.

Prepare the Chicken Casseroles

  1. Preheat the oven to 180°C (350°F).
  2. Heat the butter and olive oil in a skillet over medium heat.
  3. Add the chopped onion and cook until soft and translucent.
  4. Add the chicken fillets and cook for 3–4 minutes per side until lightly golden.
  5. Season with salt, pepper, and thyme.
  6. Place the chicken in individual casserole dishes or one baking dish.
  7. Pour the heavy cream over the chicken.
  8. Scatter the Maroilles cheese on top.
  9. Bake for 20–25 minutes, until the cheese is melted and bubbly and the chicken is fully cooked.

Serving

Serve the hot chicken casseroles straight from the oven with a generous portion of crispy homemade fries. A simple green salad makes a perfect side dish to balance the richness of the cheese sauce.
