Taco Pasta to Make at Night
A hearty, cheesy one-pot dinner that combines the bold flavors of tacos with comforting pasta. Perfect for busy weeknights!
Ingredients
- 1 lb (450 g) ground beef or ground turkey
- 1 packet (1 oz) taco seasoning
- 8 oz (225 g) pasta (shells, rotini, or penne)
- 2 cups beef or chicken broth
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup salsa
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ½ cup sour cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
Optional Toppings
- Chopped cilantro
- Sliced green onions
- Diced avocado
- Jalapeño slices
- Crushed tortilla chips
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add onion and cook until softened, about 3 minutes. Stir in garlic and cook for 30 seconds.
- Add ground beef or turkey and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning until the meat is evenly coated.
- Add pasta, broth, diced tomatoes with green chilies, and salsa. Stir well.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender.
- Remove from heat and stir in sour cream, cheddar cheese, and Monterey Jack cheese until melted and creamy.
- Let stand for 2–3 minutes before serving.
- Top with your favorite garnishes and enjoy!
