Walking Taco Casserole

A cheesy, crunchy taco bake loaded with seasoned beef, melty cheese, and crispy Doritos — the ultimate comfort food casserole!

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 bag nacho cheese Doritos, lightly crushed
  • 1 can Rotel tomatoes, drained
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  3. Stir in taco seasoning and a splash of water. Simmer for 2–3 minutes.
  4. In a large bowl, mix together the cooked beef, Rotel, black beans, corn, sour cream, cream of chicken soup, and 1 cup shredded cheese.
  5. Spread half of the crushed Doritos into a greased baking dish.
  6. Pour the beef mixture over the chips and spread evenly.
  7. Top with remaining Doritos and the rest of the shredded cheese.
  8. Bake for 20–25 minutes until hot and bubbly.
  9. Garnish with sliced green onions before serving.
