Walking Taco Casserole
A cheesy, crunchy taco bake loaded with seasoned beef, melty cheese, and crispy Doritos — the ultimate comfort food casserole!
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 bag nacho cheese Doritos, lightly crushed
- 1 can Rotel tomatoes, drained
- 1 can black beans, drained and rinsed
- 1 cup corn
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can cream of chicken soup
- 2 green onions, sliced
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
- Stir in taco seasoning and a splash of water. Simmer for 2–3 minutes.
- In a large bowl, mix together the cooked beef, Rotel, black beans, corn, sour cream, cream of chicken soup, and 1 cup shredded cheese.
- Spread half of the crushed Doritos into a greased baking dish.
- Pour the beef mixture over the chips and spread evenly.
- Top with remaining Doritos and the rest of the shredded cheese.
- Bake for 20–25 minutes until hot and bubbly.
- Garnish with sliced green onions before serving.
