Ingredients:
* 1 cup mayonnaise
* 2 tablespoons finely chopped shallot
* 1 tablespoon Dijon mustard

* 2 teaspoons garlic powder
* 2 teaspoons white wine vinegar
* 1 1/2 teaspoons kosher salt
* 1 teaspoon dried Italian seasoning
* 1/2 teaspoon black pepper
* 1 jar (7- to 8.5-ounce) julienne-cut sun-dried tomatoes packed in oil, drained
* 1 tablespoon oil from sun-dried tomato jar
* 2 ounces Parmesan cheese, grated
* 3 cups cooked chicken, shredded or chopped
* 1/2 cup finely chopped celery
* 2 tablespoons chopped fresh basil
* 8 slices soft whole-grain bread
* 2 cups baby arugula or spinach
Instructions:
1. In a large bowl, whisk together the mayonnaise, shallot, Dijon mustard, tomato paste, garlic powder, white wine vinegar, salt, Italian seasoning, black pepper, and reserved sun-dried tomato oil until smooth and creamy.
2. Stir in the sun-dried tomatoes, Parmesan cheese, chicken, celery, and fresh basil until everything is evenly coated.
