Oven-Baked 3-Ingredient Crispy Smashed Potato Medallions
These crispy smashed potato medallions are golden on the outside, fluffy on the inside, and unbelievably easy with just 3 simple ingredients!
Ingredients
- 1½ lbs baby potatoes
- 2–3 tablespoons olive oil
- Salt, to taste
Optional Extras
- Garlic powder
- Black pepper
- Parmesan cheese
- Fresh parsley
Instructions
- Boil the potatoes
Place potatoes in salted water and boil for 15–20 minutes until fork tender. - Preheat the oven
Set oven to 425°F (220°C). Line a baking tray with parchment paper. - Smash the potatoes
Arrange potatoes on the tray and gently flatten each one using the bottom of a glass or measuring cup.
- Season & drizzle
Brush or drizzle with olive oil and sprinkle generously with salt. - Bake until crispy
Bake for 30–40 minutes, flipping halfway through, until deeply golden and crispy around the edges.
