Oven-Baked 3-Ingredient Crispy Smashed Potato Medallions

These crispy smashed potato medallions are golden on the outside, fluffy on the inside, and unbelievably easy with just 3 simple ingredients!

Ingredients

  • 1½ lbs baby potatoes
  • 2–3 tablespoons olive oil
  • Salt, to taste

Optional Extras

  • Garlic powder
  • Black pepper
  • Parmesan cheese
  • Fresh parsley

Instructions

  1. Boil the potatoes
    Place potatoes in salted water and boil for 15–20 minutes until fork tender.
  2. Preheat the oven
    Set oven to 425°F (220°C). Line a baking tray with parchment paper.
  3. Smash the potatoes
    Arrange potatoes on the tray and gently flatten each one using the bottom of a glass or measuring cup.
  1. Season & drizzle
    Brush or drizzle with olive oil and sprinkle generously with salt.
  2. Bake until crispy
    Bake for 30–40 minutes, flipping halfway through, until deeply golden and crispy around the edges.
