Cheesy Loaded Meatloaf Casserole
A hearty and comforting dinner made with juicy meatloaf, creamy mashed potatoes, melted cheddar cheese, and crispy bacon. Perfect for a cozy family meal.
Ingredients
For the Meatloaf Layer
- 1½ lbs ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 egg
- ½ cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
For the Mashed Potato Layer
- 4 cups mashed potatoes
- 2 tablespoons butter
- ¼ cup milk or cream
- Salt and pepper to taste
Toppings
- 2 cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- Chopped parsley or green onions for garnish
Instructions
- Preheat the oven to 375°F (190°C). Grease a casserole dish lightly with butter or cooking spray.
- In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined.
- Press the meat mixture evenly into the prepared casserole dish.
- Bake for 25 minutes until the meat is mostly cooked through. Carefully drain excess grease if needed.
- While the meatloaf bakes, prepare the mashed potatoes by mixing the potatoes with butter, milk, salt, and pepper until creamy.
- Spread the mashed potatoes evenly over the baked meatloaf layer.
- Top with shredded cheddar cheese and crumbled bacon.
- Return the casserole to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
- Garnish with parsley or green onions before serving.
