Mozzarella Stuffed Soft Pretzels
Soft, golden homemade pretzels stuffed with gooey mozzarella cheese — crispy on the outside and perfectly fluffy inside. These are perfect for snacks, game nights, or party appetizers!
Ingredients
For the Pretzel Dough
- 1 1/2 cups warm water (110°F to 115°F)
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons active dry yeast (1 packet)
- 4 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons unsalted butter, melted

- 8 ounces mozzarella cheese, cut into sticks or cubes
Baking Soda Bath
- 10 cups water
- 2/3 cup baking soda
For Topping
- 1 large egg, beaten
- Coarse sea salt or pretzel salt
- Optional: garlic butter, Parmesan cheese, or Italian seasoning
Instructions
Step 1: Activate the Yeast
In a large mixing bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for 5–10 minutes until foamy.
Step 2: Make the Dough
Add the flour, salt, and melted butter to the yeast mixture. Mix until a dough forms.
Knead the dough on a lightly floured surface for about 5–7 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover with a towel, and let it rise for 1 hour or until doubled in size.
Step 3: Prepare the Cheese Filling
Cut the mozzarella into sticks or cubes and keep chilled until ready to use.
Step 4: Shape the Pretzels
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Punch down the dough and divide it into 8 equal pieces.
Roll each piece into a long rope. Flatten slightly, place mozzarella in the center, then pinch the dough tightly around the cheese to seal completely.
Shape each rope into a pretzel.
Step 5: Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a gentle boil.
Carefully place each pretzel into the water for about 20–30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
Step 6: Add Toppings
Brush each pretzel with beaten egg and sprinkle with coarse salt.
Step 7: Bake
Bake for 12–15 minutes or until deep golden brown.
For extra flavor, brush warm pretzels with melted garlic butter and sprinkle with Parmesan cheese or herbs.
