Lemon Crumb Bars
These buttery Lemon Crumb Bars are soft, sweet, tangy, and topped with a golden crumble that melts in your mouth. Perfect for spring desserts, parties, or an easy afternoon treat!
Ingredients
For the Crust & Crumble
- 2 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
For the Lemon Filling
- 1 can (14 oz) sweetened condensed milk
- 4 large egg yolks
- ½ cup fresh lemon juice
- 1 tablespoon lemon zest
Instructions
Step 1: Prepare the Pan
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish or line it with parchment paper.
Step 2: Make the Crumb Mixture
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the melted butter, egg, and vanilla extract.
Mix until crumbly.
Reserve about 1 ½ cups of the mixture for the topping.
Press the remaining mixture firmly into the bottom of the prepared baking dish.
Step 3: Bake the Crust
Bake the crust for 12–15 minutes, or until lightly golden.
Step 4: Make the Lemon Filling
In another bowl, whisk together:
- sweetened condensed milk
- egg yolks
- lemon juice
- lemon zest
Mix until smooth and creamy.
Step 5: Assemble
Pour the lemon filling over the warm crust.
Sprinkle the reserved crumb mixture evenly on top.
Step 6: Bake
Return to the oven and bake for 20–25 minutes, or until the top is lightly golden and the filling is set.
Step 7: Cool & Serve
Let the bars cool completely before slicing.
For best results, chill them in the refrigerator for 1 hour before serving.
