Low Carb Amish Broccoli Salad
A creamy, crunchy, keto-friendly broccoli salad loaded with bacon, cheddar cheese, and a tangy dressing. Perfect for BBQs, meal prep, or a quick low-carb side dish.
Ingredients
- 4 cups broccoli florets
- 3 cups cauliflower florets
- 1 cup shredded cheddar cheese
- 1/2 cup red onion, finely chopped
- 1/2 cup crispy bacon, crumbled
Dressing
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp apple cider vinegar
- 2 tbsp erythritol or keto sweetener
- Salt and black pepper to taste
Instructions
- Bring a pot of water to a boil. Blanch the broccoli and cauliflower for about 2 minutes.
- Transfer immediately to an ice bath to stop cooking. Drain very well.
- In a large bowl, combine broccoli, cauliflower, cheddar cheese, onion, and bacon.
- In another bowl, whisk together mayonnaise, sour cream, vinegar, sweetener, salt, and pepper.
- Pour the dressing over the salad and toss until fully coated.
- Refrigerate for at least 1 hour before serving for the best flavor.

- Add sunflower seeds or sliced almonds for extra crunch.
