Low Carb Amish Broccoli Salad

A creamy, crunchy, keto-friendly broccoli salad loaded with bacon, cheddar cheese, and a tangy dressing. Perfect for BBQs, meal prep, or a quick low-carb side dish.

Ingredients

  • 4 cups broccoli florets
  • 3 cups cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crispy bacon, crumbled

Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp apple cider vinegar
  • 2 tbsp erythritol or keto sweetener
  • Salt and black pepper to taste

Instructions

  1. Bring a pot of water to a boil. Blanch the broccoli and cauliflower for about 2 minutes.
  2. Transfer immediately to an ice bath to stop cooking. Drain very well.
  3. In a large bowl, combine broccoli, cauliflower, cheddar cheese, onion, and bacon.
  4. In another bowl, whisk together mayonnaise, sour cream, vinegar, sweetener, salt, and pepper.
  5. Pour the dressing over the salad and toss until fully coated.
  6. Refrigerate for at least 1 hour before serving for the best flavor.

Tips

  • Add sunflower seeds or sliced almonds for extra crunch.
  • You can swap cheddar for mozzarella or feta cheese.
  • For extra keto flavor, add a little celery seed or Dijon mustard to the dressing.
