Brown Butter Snickerdoodle Cobbler
Ingredients
For the Cobbler Batter
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 3/4 cup milk
- 1 tsp vanilla extract
For the Cream Cheese Filling
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
For the Cinnamon Sugar Topping
- 1/4 cup granulated sugar
- 1 tsp cinnamon
For the Hot Pour
- 1 1/2 cups hot water
- 1/2 cup brown sugar
Instructions
1. Brown the Butter
Preheat oven to 350°F (175°C).
Place butter in a 9×13-inch baking dish and let it melt in the oven. Continue heating until the butter turns golden brown and smells nutty. Remove carefully.
2. Make the Batter
In a mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
Stir in milk and vanilla until smooth.
Pour the batter directly over the browned butter. Do not stir.
3. Prepare the Cream Cheese Layer
In another bowl, beat cream cheese, sugar, and vanilla until creamy.
Drop spoonfuls over the batter.
4. Add the Topping
Mix together cinnamon and sugar, then sprinkle all over the top.
Sprinkle the extra brown sugar evenly across the surface.
5. Create the Cobbler Magic
Slowly pour the hot water over everything. Do not stir.
6. Bake
Bake for 40–45 minutes or until the top is golden brown and bubbly.
Let cool slightly before serving.
