Apple Pie Enchiladas (Crispy & Gooey Dessert)
Ingredients
- Apples (peeled and diced or sliced)
- 2–4 tbsp sugar (white or brown, or a mix)
- 1 tsp cinnamon (optional but highly recommended)
- Tortillas (soft flour tortillas work best)
- Butter (melted, for brushing)
- Extra sugar + cinnamon (for coating)
Optional for the filling (makes it more “apple pie” style)
- 1 tbsp butter (for cooking apples)
- 1 tsp vanilla extract
- A pinch of salt
- 1 tsp lemon juice (keeps apples fresh and balanced)
Instructions
1. Cook the apple filling
- Melt a little butter in a pan
- Add apples, sugar, cinnamon, and optional vanilla
- Cook for 5–8 minutes until soft and slightly caramelized
- Let it cool a bit so it doesn’t tear the tortillas
2. Assemble
- Spoon apple filling into each tortilla
- Roll them up tightly like enchiladas
3. Coat
- Brush each roll with melted butter
- Roll or sprinkle in a mix of sugar + cinnamon
4. Bake
- Place in a baking dish
- Bake at 180°C (350°F) for about 15–20 minutes
- Or until golden, crispy, and slightly caramelized
Result
Golden and crisp outside, warm apple filling inside, with a sweet cinnamon-sugar crunch on top. Basically apple pie—but easier, faster, and more snackable.
