 Ingredients

  • 3 pounds ground beef
  • 1–2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cans (10 oz each) Rotel diced tomatoes with green chilies, undrained
  • 1 packet taco seasoning (or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese (optional, for extra meltiness)
  • Salt and black pepper, to taste
  • Taco shells or tortillas

 Optional Toppings

  • Lettuce, shredded
  • Tomatoes, diced
  • Sour cream
  • Avocado or guacamole
  • Jalapeños
  • Fresh cilantro

 Instructions

  1. Heat the Pan
    In a large skillet over medium heat, add olive oil.
  2. Cook the Onion
    Add chopped onion and sauté for 3–4 minutes until soft and fragrant.
  3. Brown the Beef
    Add ground beef and cook until fully browned, breaking it apart as it cooks. Drain excess grease if needed.
  4. Add Flavor
    Stir in the Rotel tomatoes (with juices) and taco seasoning. Mix well and let it simmer for 5–7 minutes so the flavors blend.
  5. Make it Cheesy
    Lower the heat and stir in shredded cheddar (and mozzarella if using) until melted and creamy.
  6. Season
    Taste and adjust with salt and pepper if needed.
  7. Assemble Tacos
    Spoon the cheesy beef mixture into taco shells or tortillas.
  8. Add Toppings & Serve
    Top with your favorite toppings and serve warm!

 Tips

  • For extra spice, use hot Rotel or add chili flakes.
  • Want it creamier? Stir in a little cream cheese.
