Ingredients
- 3 pounds ground beef
- 1–2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cans (10 oz each) Rotel diced tomatoes with green chilies, undrained
- 1 packet taco seasoning (or homemade)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese (optional, for extra meltiness)
- Salt and black pepper, to taste
- Taco shells or tortillas

- Tomatoes, diced
- Sour cream

Instructions
- Heat the Pan
In a large skillet over medium heat, add olive oil. - Cook the Onion
Add chopped onion and sauté for 3–4 minutes until soft and fragrant. - Brown the Beef
Add ground beef and cook until fully browned, breaking it apart as it cooks. Drain excess grease if needed. - Add Flavor
Stir in the Rotel tomatoes (with juices) and taco seasoning. Mix well and let it simmer for 5–7 minutes so the flavors blend. - Make it Cheesy
Lower the heat and stir in shredded cheddar (and mozzarella if using) until melted and creamy. - Season
Taste and adjust with salt and pepper if needed. - Assemble Tacos
Spoon the cheesy beef mixture into taco shells or tortillas. - Add Toppings & Serve
