Keto Cheesecake Brownies
Ingredients
For the brownie layer:
- 1/2 cup melted butter
- 1/2 cup unsweetened cocoa powder
- 3/4 cup keto sweetener (erythritol or any low-carb sweetener)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup almond flour
- Pinch of salt
For the cheesecake layer:
- 7 oz (200g) cream cheese, softened
- 1/4 cup keto sweetener
- 1 large egg
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (180°C) and line or grease a small baking pan.
- Make the brownie batter:
- In a bowl, mix melted butter, cocoa powder, and sweetener until smooth.
- Add eggs and vanilla, then mix well.
- Stir in almond flour and a pinch of salt.
- Make the cheesecake layer:
- Beat cream cheese and sweetener until creamy.
- Add the egg and vanilla, and mix until smooth.
- Pour most of the brownie batter into the pan (reserve a little).
Spread the cheesecake mixture on top.
Drop the remaining brownie batter over it and swirl with a knife. - Bake for 25–30 minutes until set.
- Let it cool completely, then chill in the fridge for at least 1 hour for the best texture.
Tips
- Add sugar-free chocolate chips for extra richness.
- These taste even better cold!
