Keto Cheesecake Brownies

 Ingredients

For the brownie layer:

  • 1/2 cup melted butter
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup keto sweetener (erythritol or any low-carb sweetener)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • Pinch of salt

For the cheesecake layer:

  • 7 oz (200g) cream cheese, softened
  • 1/4 cup keto sweetener
  • 1 large egg
  • 1/2 tsp vanilla extract

 Instructions

  1. Preheat your oven to 350°F (180°C) and line or grease a small baking pan.
  2. Make the brownie batter:
    • In a bowl, mix melted butter, cocoa powder, and sweetener until smooth.
    • Add eggs and vanilla, then mix well.
    • Stir in almond flour and a pinch of salt.
  3. Make the cheesecake layer:
    • Beat cream cheese and sweetener until creamy.
    • Add the egg and vanilla, and mix until smooth.
  4. Pour most of the brownie batter into the pan (reserve a little).
    Spread the cheesecake mixture on top.
    Drop the remaining brownie batter over it and swirl with a knife.
  5. Bake for 25–30 minutes until set.
  6. Let it cool completely, then chill in the fridge for at least 1 hour for the best texture.

 Tips

  • Add sugar-free chocolate chips for extra richness.
  • These taste even better cold!
