 Cowboy Meatloaf and Potato Casserole

 Ingredients

For the Meatloaf:

  • 1 lb ground beef
  • ⅓ cup bread crumbs
  • ½ large onion, finely chopped
  • ¼ cup BBQ sauce
  • 1 egg
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

For the Potato Layer:

  • 3–4 medium potatoes, peeled and sliced thin
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

 Instructions

  1. Preheat oven to 180°C (350°F).
  2. Prepare the meatloaf mixture
    In a large bowl, combine:

    • ground beef
    • bread crumbs
    • chopped onion
    • BBQ sauce
    • egg
    • salt, pepper, and garlic powder
      Mix until well combined.
  3. Shape the meatloaf
    Press the mixture evenly into a greased baking dish.
  4. Prepare the potatoes
    • Slice potatoes thinly
    • Season with salt and pepper
    • Mix with milk and melted butter
  5. Assemble the casserole
    • Layer the sliced potatoes on top of the meatloaf
    • Sprinkle shredded cheddar cheese over the potatoes
  6. Bake
    • Cover with foil and bake for 45 minutes
    • Remove foil and bake another 15–20 minutes until potatoes are tender and cheese is golden
  7. Rest & Serve
    Let it rest for 5–10 minutes before serving.

 Tips

  • Add bacon bits for extra “cowboy” flavor
  • Use smoked BBQ sauce for a deeper taste
  • Serve with a simple salad or corn on the side
