Cowboy Meatloaf and Potato Casserole
Ingredients
For the Meatloaf:
- 1 lb ground beef
- ⅓ cup bread crumbs
- ½ large onion, finely chopped
- ¼ cup BBQ sauce
- 1 egg
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
For the Potato Layer:
- 3–4 medium potatoes, peeled and sliced thin
- 1 cup shredded cheddar cheese
- ½ cup milk
- 2 tablespoons butter, melted
- Salt and pepper to taste
Instructions
- Preheat oven to 180°C (350°F).
- Prepare the meatloaf mixture
In a large bowl, combine:- ground beef
- bread crumbs
- chopped onion
- BBQ sauce
- egg
- salt, pepper, and garlic powder
Mix until well combined.
- Shape the meatloaf
Press the mixture evenly into a greased baking dish. - Prepare the potatoes
- Slice potatoes thinly
- Season with salt and pepper
- Mix with milk and melted butter
- Assemble the casserole
- Layer the sliced potatoes on top of the meatloaf
- Sprinkle shredded cheddar cheese over the potatoes
- Bake
- Cover with foil and bake for 45 minutes
- Remove foil and bake another 15–20 minutes until potatoes are tender and cheese is golden
- Rest & Serve
Let it rest for 5–10 minutes before serving.
Tips
- Add bacon bits for extra “cowboy” flavor
- Use smoked BBQ sauce for a deeper taste
- Serve with a simple salad or corn on the side
