  3. Bring to a gentle simmer, stirring until the sugar dissolves.
  4. Pour the hot brine over the peppers and onions, ensuring everything is covered.
  5. Let cool to room temperature.
  6. Cover and refrigerate for at least 2 hours (overnight for best flavor).
