Perfect Prime Rib Roast (Foolproof)
A show-stopping roast with a crispy, seasoned crust and a juicy, rosy-pink center. Perfect for holidays and special dinners.
Ingredients
- 1 prime rib roast (6–8 lb / 3–4 kg)
- 3 tbsp melted butter
- 3 tbsp olive oil
- 6 cloves garlic, minced
- 1 tbsp coarse salt
- 1 tbsp black pepper
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
Instructions
- Bring to room temp: Remove the roast from the fridge and let it sit out for 1 hour.
- Make the rub: Mix butter, olive oil, garlic, salt, pepper, rosemary, and thyme.
- Season: Rub the mixture all over the roast on every side.
- Rack it: Place the roast on a rack in a roasting pan (for even air flow).
Roasting
- Preheat oven to 465°F (240°C).
- Roast for 20 minutes to form a deep crust.
- Reduce heat to 325°F (160°C) and continue roasting:
- About 15 minutes per 1 lb (500 g) for medium-rare.
- Best method: use a meat thermometer.
- 125–130°F (52–54°C) = perfect medium-rare
Rest (very important)
Remove from oven, tent loosely with foil, and rest 30 minutes before slicing. This keeps the juices inside.
Serving
Slice thick and serve with:
- Roasted potatoes
- Mushroom or peppercorn sauce
- Roasted vegetables
Result: Tender, juicy beef with a flavorful crust and beautiful pink center.
