Crockpot Sausage & Potatoes (Easy Slow Cooker Recipe)

 Ingredients

  • 1.5 lbs smoked sausage (like kielbasa), sliced into ½-inch rounds
  • 700 g baby potatoes, halved (or quartered if large)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup chicken broth

 Instructions

  1. Prep the ingredients: Wash and halve the baby potatoes. Slice the sausage and chop the onions, garlic, and peppers.
  2. Season the potatoes: In a bowl, toss the potatoes with olive oil, paprika, salt, pepper, and Italian seasoning.
  3. Layer in the crockpot: Place the seasoned potatoes at the bottom. Add the onion, garlic, and bell peppers. Top with the sausage slices.
  4. Add broth: Pour the chicken broth over everything.
  5. Cook:
    • Low: 4 hours
    • High: 2 hours
      Stir halfway if you can, and check that the potatoes are fork-tender when done.
  6. Serve warm: Garnish with parsley if you like and enjoy straight from the crockpot.

 Notes

  • You can add onions and peppers for extra flavor — they soften beautifully.
  • For a creamier version, some people mix in cream soup or broth before cooking.
  • Tossing everything in the slow cooker in the morning means dinner’s ready later with minimal work.
