Unstuffed Cabbage Beef

 About This Dish

This is a lazy version of traditional cabbage rolls—same comforting flavors but no rolling required. It combines ground beef, cabbage, rice, and tomato sauce into one hearty meal.

 Ingredients

  • 500 g (1 lb) ground beef
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 1 small cabbage, chopped (about 5–6 cups)
  • 1 can diced tomatoes (400 g)
  • 1 can tomato sauce (200–250 g)
  • 1–1½ cups beef broth
  • 1 cup uncooked rice
  • 1–2 tbsp brown sugar (optional, for sweetness)
  • 1 tbsp vinegar (for a slight tang)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste

 Instructions

  1. Cook the beef
    In a large pot or skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add aromatics
    Add onion and garlic. Cook 3–5 minutes until soft and fragrant.
  3. Add cabbage & sauce
    Stir in:

    • chopped cabbage
    • diced tomatoes
    • tomato sauce
    • beef broth
    • sugar, vinegar, and spices

    Mix well.

  4. Simmer
    Bring to a gentle simmer, cover, and cook for 15–20 minutes until cabbage softens.
  5. Add rice
    Stir in uncooked rice, reduce heat to low, cover, and cook another 20 minutes until rice is tender and liquid is absorbed.
  6. Rest & serve
    Let sit 5 minutes before serving. Taste and adjust seasoning.

 Serving Ideas

  • Serve as-is (like a stew)
  • Or over rice / mashed potatoes
  • Add sour cream or fresh parsley on top

  • Add a pinch of cinnamon or nutmeg for a traditional Eastern European touch
  • Use half beef + half lamb or turkey for variation
